I'm suspicious that the DRAM used as a sensor may be the Mostek MK4006. The pictures of the sensor have the same construction and the pinout looks correct.

I found the assembly manual and schematics for the camera and controller in the hartetechnologies collection. The controller manual seems to be missing the schematic for the 2nd board of the controller. There is still no description of the imaging chip, except to list a Cromemco part number. Making (slow) progress! There are still some Cromemco people around and I'll try to find and contact them.
