Either will work just fine.  In fact, some builders prefer the 0.01 uF bypass caps since they absorb the troublesome high frequency noise better than the 0.1 uF caps.  It depends on the circuit but for most of the home brew project frequencies (less than 10 MHz) 0.1 uF works just fine.
 
One cap per chip is probably overkill but the net effect quiets the whole board.  The real trick is getting a nice clean path between VCC and GND on each chip. The autorouter doesn't always cooperate in this regard...

Totally unscientifically, I’d probably use the 0.2uF rather than the 0.01uF for decoupling because of the higher capacitance.

I'm curious as to others opinions about decoupling caps. These are typically 0.1uF disc caps which is what is specified for all of the various boards in the N8VEM family.

In a grab bag I recently bought I found a large number of 0.01uF and 0.2uF disk caps (over 1000 of each). What are your thoughts on using these?
